Grilled Cheese Dunkers with Tomato Soup

 

 

What do I add to something to make it  more flavorful?

Pesto.

Even Alfredo?

Pesto.

Quinoa?

Pesto.

Grilled Cheese?

PESTO.

Grilled Cheese Dunkers  with Tomato Soup

Ingredients:

Sandwiches:

2 slices bread per sandwich

2 tbsp pesto per sandwich

1/4 cup shredded mozzarella per sandwich

1 tbsp butter per sandwich

Tomato Soup:

1 28 oz can tomato puree

1/4 of an onion, chopped

salt and pepper

1 tsp olive oil

Procedure:

In a medium saucepan, heat up the olive oil over medium heat and saute your onions until translucent.

Add your tomatoes and simmer for about 5 minutes. I used diced tomatoes, so I blended mine afterwards for a smoother texture.

You could also add some heartier vegetables to this and maybe even some cooked pasta if you wanted t0 eat it by itself.

Butter both pieces of bread and brush the un-buttered side with pesto. Add the mozzarella and sandwich the two pieces of bread together. Make sure that there is butter on the sides that will hit your panini press or skillet.

Cook your grilled cheese on a preheated panini press or hot skillet, like you would any  other grilled cheese.

Cut the grilled cheese into little fingers or “dunkers” and wrap two dunkers together with a thin strip of parchment, if you want.

Serve with the hot tomato soup. Enjoy!!! 🙂
