Homemade Pasta Dough

Yum. E.
That’s all I have to say about this.
Fresh Pasta Dough
Recipe From Laura Vitale

2 3/4 cups all purpose flour, plus more for dusting
3 eggs, lightly beaten
1 tsp salt
2 tbsp olive oil
1/4 – 1/3 cups water

Get all your ingredients and put them in a food processor! Or a bowl.
Process or stir until you reach this consistency.
Then, knead a few times on a well floured surface.
Like that.
Form into a ball and let rest in a bowl for about a half hour.
Cut the dough into eight equal pieces.
Then, roll it into a long sheet.
I was singing “they see me rollin’ they hatin’!” the whole time I was rolling out dough.
Then, your pretty much done. One of those long sheets can be used for ravioli or lasagna, but I cut mine into noodle shapes.
You could even take some cookie cutters to these.
Well, if you make noodles, fold the dough in half lengthwise, and again, and again, until you have what looks like a burrito. Then, just slice it and you have noodles.
Oh yeah, and unfold them, too.
Then, throw them into some boiling salted water until they float, and you are done! I served this with red sauce, but you could use any sauce you wanted.
