Homemade Veggie Fried Rice

This fried rice is so easy and delicious! Literally, the longest part is waiting for your pot of rice to cook. And might I add that it is WAY healthier than any other takeout Chinese restaurant’s version. I mean come on, how could you go wrong?
Veggie Fried Rice
Serves 4

2 eggs
1 red bell pepper, chopped
1/2 cup shredded carrots
3 scallions, chopped (reserve some for garnish)
4 cups cooked jasmine rice
3 Tbsp soy sauce
2 Tbsp toasted sesame oil
2 Tbsp toasted sesame seeds
1 Tbsp peanut oil (you can use vegetable oil if you prefer)

1.Heat the peanut oil in a large wok over high heat until shiny. When shiny and glistening, add your eggs in and scramble until cooked. Remove from wok to a separate plate.
2. Add your veggies to the wok and soften, about two minutes. Add back in the egg, rice, soy sauce, and sesame oil/seeds. Continue to stir fry until the ingredients are warmed through and cooked. Serve immediately! Enjoy!
