I love P.F. Chang’s. Even though I’ve only been there once. We don’t have many chains where I liveP.F. Chang’s is one of the most unhealthy places to eat EVER. Well, that is according to my mother’s Eat this Not that book. So, I came up with mock spicy garlic noodles and chicken lettuce wraps. There not that bad for you now:)
Spicy Garlic Noodles
1 lb Chinese egg noodles, cooked according to package directions
1 medium cucumber, chopped into matchsticks and tossed with 1 tbsp of rice vinegar and a dash of salt
5 scallions, chopped
3 cloves of garlic, minced
1/3 cup agave nectar
2 tbsp toasted sesame oil
3 tbsp rice vinegar
1 tbsp sesame seeds, plus more for garnish
1/2 tsp red chili flakes
Add the agave, chili, rice vinegar, sesame oil, and garlic to a small pan over medium heat.
Cook until reduced slightly.
Add all ingredients to a large bowl and toss. Serve right away.
Chicken Lettuce Wraps
1.5 lbs chicken tenderloin, chopped into small pieces
1/4 cup hoisin sauce
2 tbsp sesame oil
2 tbsp soy sauce
1 tsp garlic powder
2 heads of romaine lettuce, tops and bottoms cut off and leaves separated into cups
sesame seeds, for garnish
In a small bowl or measuring cup, add your soy sauce, sesame oil, hoisin sauce, and garlic powder.
Stir until well combined.
Chop your chicken really finely if you hadn’t already and place in a large skillet over medium heat. Cook the chicken until it is not raw in the center.
Add the hoisin mixture to the pan and stir until well coated. Let the sauce thicken and reduce.
While the sauce is thickening, cut your romaine into the shape above, rinse them, and pat dry.
Once the sauce has thickened, spoon some of the chicken mixture into the lettuce. Serve on a plate with ALOT of napkins and enjoy!
