These are too good for words. I made them tonight and they were a hit for my family! They are more appropriate for an appetizer, but we made them for dinner. They were still just as tasty. 🙂 We all ate in my parents room because of the sweltering heat of the dining room/ kitchen. And because it is air conditioned. Very air conditioned.
I love the addition of arugula in this because of the peppery kick it gives.
Makes 16, give or take
1 lb pizza dough, store bought or homemade
1 lb sweet Italian sausage
15 oz ricotta cheese
1 cup shredded mozzarella cheese
1/4 cup parmesan
a few handfuls of fresh baby arugula
marinara sauce, for dipping
In a dry skillet, brown up your sausage. ( There isn’t any need to add some olive oil to the pan, the sausage has enough fat in it to brown up nicely on its own)
Drain. And set aside to cool.
Add all the cheeses, s+p, arugula, and cooled sausage to a medium mixing bowl. Stir to combine.
Roll out your pizza dough to a thin sheet and cut into squares.
Put a few spoonfuls of the sausage mixture onto half of the dough, then fold over the other dough and seal the edges. Also, I like to crimp the edges with a fork. Place each on on a baking sheet once assembled.
Bake in a 400 degree Fahrenheit oven until golden and crispy. This should take about 15-20 minutes.
Serve with warm marinara sauce for dipping.
